Roasted Asparagus with Wasabi Vinaigrette

If you’ve ever turned up your nose at asparagus, this recipe is for you. A hint of sesame and wasabi transform this vegetable into a craveable vegetable staple. For best results, be sure to use wasabi paste not powder!

INGREDIENTS

  • 1 bunch asparagus, trimmed
  • 1 tsp sesame oil
  • ½ tsp kosher salt

Wasabi Vinaigrette

  • 1 tsp wasabi paste
  • 1 tsp sesame oil
  • 3 Tbsp grapeseed oil
  • 1 Tbsp mirin
  • 1 Tbsp rice vinegar
  • 2 tsp scallion, sliced thinly
  • 1 clove garlic, minced
  • ¼ tsp kosher salt

INSTRUCTIONS

  1. Preheat oven to 375F. Toss asparagus with salt and sesame oil. Place on parchment lined sheet tray and roast 15-20 minutes until soft.
  2. Whisk together all ingredients for vinaigrette and drizzle over asparagus.
